Eggs Poaching 101 at #Yolk's

Did you know - If you add one small spoonful of vinegar to a pot of hot water before you stir an egg in one direction, the likelihood of you getting a perfectly poached egg is much higher than stirring it in just the good old plain water. I obviously did not learn the trick early enough in university that I had been making half a poached egg in hot boiling water the wrong way for a very long time.


I spent a whole lot of my spare time looking and scouting around for new brunch and happy hour menus around town. And to be fair, I really do enjoy pulling the list of menus out from time to time and planned my trips around town on occasional sunny mornings.

So that's what we did on a beautiful Saturday morning like today, we took ourselves to Yolks Breakfast out in their outdoor patio seats (oooh yea they are very comfortably heated too) located on East Hasting of Vancouver. I say beautiful and sunny, but literally half of Vancouver's sunny days during the Spring time remains extremely chilly - a wind warning recorded at 60 km/h has been issued despite of the bright sunshine.


It is probably still incomparable with the rest of Canada, but yep, it is windy, very.


Just like many other brunch spots in Vancouver, Yolks also has been blessed with an incredibly long line up during brunching hours. And folks, it only opens from 9-3 on weekends! According to many reviews online, it takes an average of about 30-45 minutes before you can get a table anytime past noon. Luckily for us, we headed down to the diner at an earlier time (around 10:30am) and it only took us about 20 minutes to get in.

What's #Yolks most famous for? Just like Medina's waffles and paella, Yolks' most famous for their perfectly poached bennies and perfectly poached plates. Aside from the sweets, you can almost top anything with one or two perfectly poached eggs.


It has probably been an equally difficult (first world) decision to choose between the sweets vs. savoury, and to decide on getting one item among their 3 savoury sets.


I picked an easy way out and we went down with items on their classics. The Yolks Breakfast compiles of the following: two perfectly poached or softly scrambled eggs, choice of double smoked bacon, English bangers, ham or fresh avocado. Choice of either truffle-lemon potatoes or hash brown patties and sourdough or multigrain toast. With fresh fruit bowl. Aside from the creamy poached eggs, these are the individual items I would recommend trying as they really did a great job standing out from the rest of the plates: (1) truffle-lemon potatoes as a separate side, and (2) white bean cassoulet from The Full British (Columbian) Breakfast.

Definitely been regretting for not getting the Chicken & Waffle and their tall stack of pancakes, topped with bananas, candied walnuts, whipped cream & salted caramel, as I saw them arriving at our neighbouring table. And most definitely also have spotted those glistening candied walnuts from a far distance as the waiter walked by with the fully stacked plate.


Nevertheless, here's a perfectly #grammable poached egg that I've never found success in making!
